Nutrition Scientist

Simon Bøge Riis is a Nutrition Scientist in the Commercial organization at Arla Foods Ingredients, where he works closely with academic partners and customers to document the efficacy of milk‑based ingredients through clinical trials. He holds a PhD in exercise physiology from a collaborative program between Aarhus University, Steno Diabetes Center Aarhus, and Massey University in New Zealand.

Since 2021, Simon has led Arla Foods Ingredients’ research into galactose and lactose in adult nutrition. While sugars such as glucose and fructose are well understood, galactose remains surprisingly underexplored in adults—a knowledge gap that became the key driver for launching this research area.
