Being able to purchase a broad palette of functionalities based on natural whey proteins is certainly valuable to bakers – but it’s only one part of the close working relationships between Arla Foods Ingredients and our bakery customers.

Our bakery application experts work with an enormous number of recipe trials every year – looking at the ways in which recipes, raw material and processes perform together. They have applied protein-based solutions to a wide variety of technical challenges, helping bakers to deliver new, innovative products to market, solve quality issues or optimise production and cost. And they’re always ready to apply this expertise to your business.

Specialised centres
The venue for such trials, in most cases, is our specialised bakery application centre. While we are often on-site with our customers, either in their pilot plants or working directly on the production line, our application centre features custom-tailored equipment that enables systematic, thorough and efficient testing of our ingredients. We can conduct more than 30 different trials per day, lowering your costs and drastically shortening the time to the end result – a highly functional and affordable solution to whatever you are trying to achieve.

Essential differences
Two factors, in particular, make the way we work different to that of other ingredient manufacturers. First, our staff typically have bakery backgrounds – and a degree in food technology. So they understand far more than the ingredient functions, processes and commonly used machinery – they also have in-depth understanding of protein technology and the way in which proteins react in different products and processes.

Second, our application centre enables us to replicate around 75 to 80 percent of our customers’ challenges, providing a solid basis for subsequent testing. If replication is not possible at our own centre, we collaborate with one of our trusted partners, or alternatively, undertake the examination with the customer at their own site.
