High-yield ham in next to no time
Twintell® cuts time to market to a profitable minimum
Meat manufacturers can expect a fast response when they turn to the Arla Foods Ingredients meat group for product development assistance. From the dialogue that determines their needs to the development of an optimised solution, manufacturers may only have to wait a couple of days – although more complex requirements take a little longer. As a customer in South America recently experienced, that knocks months off the typical time to market for a new or improved meat product. High yield, high quality “The customer saw our solutions presented at a trade fair and was interested in developing an improved ham product with higher yield,” explains Grethe Mikkelsen, meat group application manager. “Our technical sales manager defined the customer’s needs and then worked closely with our application team. The solution we developed increased ham yield to 138% without compromising quality.” A functional milk protein from the MULTILAC® range is the key ingredient. Neutral in flavour and colour, its excellent water-binding properties ensure the appealing structure and firmness of the final ham, which can be cut in the thinnest possible slices. Process optimisation was another important part of the package.
